What is technically named the TUBER MELANOSPORUM, also more commonly called the black Perigord Truffle harvested early December until late February.
This type of truffle is found under very specific trees such as the green oak, the hazelnut tree, the tilleul, etc.
Those types of trees must be “mycorhizes” and the terrain must be of an auspicious composition for the truffles to grow.
The TUBER MELANOSPORUM cycle commences in Spring and usually lasts nine months.
In Summer, it gradually grows to reach maturity in the Autumn.
Its aroma is quite exceptional as is its gustatory qualities.
The cultivation of truffles is however quite random compared to the climate in which it is grow as the latter plays an important role in its initial development, thereby making it a relatively rare product.
